One fine night of catching up with a friend who’s back for vacation in the city wouldn’t be complete without sitting down for a good cup of coffee in a rainy Friday night. I’m not always in the hunt for new flavors, it just so happen that these days, my friends knows the best places to go to for coffee and pastries. As Julia Child would say it “People who love to eat are always the best people”. I got a handful of those people indeed.
You see, I never force anything down my system, but with my adventurous taste in trying new things, especially when it comes to food, I can hardly say no to an offer. I am not a Matcha fan, but I am in for a treat to taste one of the newest Matcha Bomb in town!
Just right at the back of Recado’s Restaurant is a secret hideaway called “The Bakery” – located at Tent 3, Villa Angela Marketplace, Circumferential Road, Brgy Villamonte, Bacolod City, store hours is from 7AM till 11PM.
Since last year Chef Nat and the rest of his friends has been experimenting a lot of pastries in their kitchen, coming up with simple cookies, to breads and frappuccino. With their humble beginnings in joining local and international culinary competition, Nat and his friends has really come a long way, and The Bakery is just the start of it all.
Matcha Bomb & Matcha Latte
With his many attempt in mastering that perfect matcha cake, chef Nat may have created a masterpiece this time with this Matcha Bomb.The search for the best ingredient even lead him as far as outside Bacolod City. He even told me that most of their cakes has its own stories to tell. Let this matcha bomb tell you its story, get a slice of it and get blown away!
So if you’re looking for the best Matcha fix in town; matcha sable Breton, matcha mousse, black sesame cream – then the Match Bomb from The Bakery is all you need!
As one of my reliable friend would describe it, their Matcha Latte has a balance taste of vegetal flavor mixed with a mild sweetness aftertaste. Chef Nat made this Latte out of the ordinary as it is blended with vanilla and roasted red rice for a nutty note flavor. I dared to try it ( though I am no matcha fan ) and till now, I am having a hard time describing the taste without giving it justice. It tasted a bit strange at first, and after a few more sip, hate to admit, but yeah, I kinda like it, not too bitter, not too sweet and i love the hint of the nutty flavor aftertaste that it leaves in my mouth. I can now relate to that vegetal taste and that aroma that I was not so used too at first, this Matcha Latte has it spell on me.
Since matcha tea comes in fine powder form, it can be used in cooking and baking as a main ingredient as well as garnishing.
Tablea – Filipino chocolate made form tablea cocoa sourced from local farmers to produce a decadent drink.
If you’ve tried the freshly served hot Tablea in Dumaguete then there is no need for you to do that 6 hour drive – you can get your fresh fill of this chocolate in The Bakery. I visited dumaguete a fews ago and the taste of tablea still remains somewhere in my palate and when I took a bite of this tart it feels like I never even left Dumaguete. They also serve hot Tablea in a cup, 65php for the Puro and 75php for the con leche. The Bakery gets their pre ordered products from one of the local shops in Dumaguete’s producers.
I am such a cookie monster, well this definitely was a good pack of goodie for 80php. I shared it with my friends and everybody dived in, it didn’t even last for 5 minutes. I decided to give it a try as I remember a week ago, i brought a pasalubong from Iloilo city and my friend mentioned that she is more of a “chewy cookie” person. This “chewy” cookie definitely redeemed me of my generosity.
We arrived early that day and we noticed how the rest of the staff prepared their freshly baked breads, as they also do big orders for hotels around the city.
Freshly baked breads such as Pandesal are also sold inside the store.
